What Michael means is that, in the majority of brews, the choice of grains - and how they are handled - determine the biggest part of what you're going to get in the glass and how good it's going to be. That's not to slight the importance of hops, yeast, etc., but craft brewers spend a lot of thought - and time - selecting just the right grain for each different beer. The choices are about flavor, balance, mouth feel, color, tradition, and more. And it's a subject Michael has been exploring in mill rooms from coast to coast.
